This cake is simply delicious and is gluten free. This is similar to a Spanish torte. This receipe uses whole and seperated eggs and almond flavors.

Ingredients
  

  • 1 cup sugar I prefer to use an unbleached raw sugar. I know, sugar is sugar, so I pick the bad stuff wisely 😉
  • 3 large eggs
  • 3 large egg whites
  • ¼ t almond extract
  • ¼ t vanilla extract
  • 2 ½ cups blanched almond flour
  • 3 T demerara sugar
  • cup sliced almonds

Instructions
 

  • Grease the sides and bottom of a 9" round cake pan. Line the bottom of the pan with parchment papers and grease again. Spray oil is fine.
  • Combine the sugar, whole eggs and egg whites, salt and both extracts.
    Whisk well until well comined, about a minute. This mixture should be frothy.
  • Add the almond flour and whisk until well mixed. Pour the batter into the cake pan.
  • Sprinkle the demerara sugar and chopped almonds.
  • Bake 45 minutes or until well browned and the crust feels firm when gently presed with your finger. Do not underbake this cake! Do not trust the toothpick cake test but rather the browning.
  • Let the cake cool in the pan on a wire rack for 10 minutues.
    Run a knife around the edges of the cake and turn onto a plate.
    Remove the parchment and turn back again onto a serving plate.
    Let the cake cool completely before serving.
  • Serve with freshly whipped cream. I like to whip cream with a little bit of confectioners sugar and sometimes I will add a bit of almond extract or amaretto.
    Serve with berries.
