Homemade Oatmeal Bread

Making homemade bread is one of lives simple pleasures. This is an easy hearty bread to make.

Ingredients
  

  • 1 cup Old Fashioned Oats (not quick cooking oats)
  • 1 T Butter, melted
  • 1 T Sea salt
  • ¼ cup Molasses
  • 2 T Brown Sugar
  • 2 cups Boiling water
  • 5 1/2 cups Bread flour
  • 1 T Instant Yeast

Instructions
 

  • Mix the first 6 ingredients in a stand mixer. Let these ingredient soak for 20 minutes
  • Mix into the wet ingredients, 2 cups of bread flour, 1 T yeast and beat in the mixer for 2 minutes.
  • Gradually add in the remaining 3 cups of flour and mix until the dough forms a ball. At this point, I change to the dough hook. You may need to add an additional 1/2 cup of flour is the dough is sticky.
  • Knead in the mixer for 8 minutes. Cover with a towel and allow to rise in a warm place for 1 1/2 hours.
  • Punch down into 2 loaves and place in 4" x 8" bread pans
  • Allow to rise for 30 minutes. Bake in a preheated 350º oven for 35 minutes.
  • Remove from pans and allow to cool, if you can resist, before slicing.

Notes

My mixer of choice is a Kitchen Aid mixer. It’s a workhorse! I’ve had 2 in my life and gave one of them to my daughter.  It’s worth the investment.
I often use whole wheat flour only in this recipe of half whole wheat and half unbleached flour.
SAF Instant Yeast is easy to use and almost full proof.
Bread pans come in many sizes and are perfectly fine to use. Free forming is also nice for rustic breads. For a nice looking formed loaf, use 4″ x 8″. I find that bread does not spread out as much and gives a nice high loaf.
I have even been known to grind my own whole wheat. A good source of really high quality wheat is Wheat Montana
